Salmon in spinach

This recipe is easy and quick and combined with some rice a actually quite healthy meal.

One of the questions I asked myself as a father was how to make my kids eat fish.



Thank god for salmon


As a kid I ate what was served at home and fish was during my childhood not very often on the table. This changed only later on when it became known that fish is good for you due to the Omega 3 fat. And it actually can taste quite nice.


Salmon is not a luxury anymore

Today my kids love sushi, mainly the simple kind, but nevertheless. At home, I have occationaly a whole fish but as soon as you have to look into the eyes of a fish and have to deal with bones, the fun stops for my kids.

So I use one of the lamest fish, salmon. Not so long ago, salmon was a luxury fish only found at high prices and eaten on special occasions. Not anymore.


Popeye meets the salmon


This dish brings together not only the fish but also a vegetable that is often hated by kids; spinach. I use salmon since it is easy to cook, has no bones and does not really has this fishy feel.

Ingredients

For 4 persons

600 g salmon fillet without skin

1 small onion (minced)

500 g of chopped spinach (frozen)

400 ml stock (vegetable or chicken)

250 ml cream

2 tablespoons of olive oil

Salt, pepper, nutmeg

Cornstarch (optional)

Preparation


Check that there are no bones in the fish. Cut the salmon in cubes, not too big, not too small. Put aside.

Heat up the olive oil in a large pan and add the onion. Fry the onions at medium heat. Add the stock and bring it to a light boil. Add the spinach and bring it again to a light boil. Make sure that the spinach is really defrozen.

Add the cream and taste. Add salt, pepper and nutmeg according to your taste. Let it simmer and add the salmon by just laying it on the spinach sauce. Put a lid on and leave the salmon to steam on the sauce. This takes only a couple of minutes.

Taste the spinach sauce again since the salmon releases some liquid.

If the sauce is too liquidish, thicken the sauce with some cornstarch. Therefore heat up a bit water, add one teaspoon of cornstarch (in a glass) and stir it well, then add it to the sauce and let the sauce simmer a bit till the sauce thickens.
