Gorgonzola cream sauce

An easy way to do a tasty, creamy sauce with the distictive taste of Gorgonzola cheese.

Not everyone likes Blue Cheese, everyone likes Gorgonzola
Gorgonzola is not for everybody. There are a lot of people that can't take the taste of Blue cheese.
Not always tomato
But this cream sauce is first of all very easy to prepare. The sauce is done within minutes. Secondly the taste of Gorgonzola is very smooth.
Goes great with gnocchi or small shaped pasta.
Ingredients
For 4 people:
100 g of Gorgonzola cheese
1 small onion chopped
250 ml chicken stock
250 ml cream to cook (25% fat)
salt/pepper
2 tablespoon (20 g) of cornstarch
1 tablespoon of olive oil
Preparation
Heat up the oil in a deep pan and fry the onions till they are translucent at a medium heat.
Add the chicken stock and bring it to a slight boil.
Cut the Gorgonzola cheese in smaller pieces and add it to the broth. Stir the cheese broth until the cheese disolves.
Add the cream and bring it to a light boil. Use a mixer to make the sauce smooth.
Disolve the cornstarch a bit of hot water and add to the sauce. Bring it carefully to a boil and check the thickness of the sauce.
Add salt and pepper to taste.
